"I hate this recipe - BECAUSE I CAN'T STOP EATING IT!!!
Seriously. I am eating just this coleslaw for lunch. Nothing else.
When I first made it, I had to shove the bowl to the back of the fridge to try to stop me from consuming the entire bowl.

"I'd give this 6 stars, if I could! Amazing flavor! I've made risottos before and been underwhelmed by them. But this one - WOW - it's soooo good! When I tasted it, my first thought was that it's the adult version of macaroni and cheese in a very sophisticated way. I will be making this again - and again and again and again."

"LOVE IT! This was such a great recipe. DELICIOUS! I have made it exactly as written, but today I decided I wanted one of these omelets, but found that I had no potatoes! Believe it or not, I substituted a can of Butterbeans for the potatoes. The textures are fairly similar, as is the flavor. A benefit to using the butterbeans out of the can is that I didn't have to boil them - made it a much quicker recipe. I sauteed them with smoked paprika, salt, and pepper as directed in the recipe. Try it - you'll be amazed! "
