Reviewed Brussels Sprouts with Bacon and Walnuts

Very good but the sliced brussel sprouts turned an unappetizing brown color. How do I keep the sliced brussel sprouts GREEN color after cooking. I know if I cook the brussel sprout whole I can place in cold water bath after cooking.""
