I also agree this is the closest recipe to stuffing inside the bird. I used butter instead of canola oil and also did not use all of the chicken broth - it would have been way too soggy.

Very good if you can get the potatoes to stay together. I found that if you wait a few minutes to pick them up after smashing them that they stay together much better. Be patient when frying and let them get nice and brown before flipping - this will also help."
