I'll assume she had left over potatoes. If not I would have used a can of corned beef and potatoes with the following steps:
In a 10'' cast iron pan brown the mixture of onions or scallions (gives coloring), or red or yellow peppers and whatever is left over in your refrigerator keeping in mind it's a hash. Add the corned beef hash, mix well...
