Makes a lot!!! This recipe makes easily 36 well stuffed shells. I used sweet Italian sausage instead of veal and a jarred red sauce. It was delicious and now I have an extra casserole in my freezer for later.

Reviewed Bread Stuffing 101

Nov 18, 2013 on FoodNetwork.com

Short cut to Grandma's way. Grandma simmered the liver and neck the night before and added this minced meat to the bread mixture. Using the simmering liquid instead of broth gives the stuffing a wonderful richness. Also, cover and steam the mixture for about 10 min.as soon as you add the broth. Wow!

Definitely brown the almonds and noodles in butter to bring out the nutty flavor. As suggested by another cook, I also added mandarin oranges and softened the dressing by adding a small amount of the orange liquid. Card club girls gave it a 5 star rating."

Delicious as a warm side with salmon. I used 1/2 lemon for the oil mixture and omitted the lemon juice when cooking the quinoa. I tossed the zested and squeezed lemon in with the grain to simmer. This makes alot more than 4 servings and I look forward to using the leftovers in a cold salad with shrimp, spinach, sundried tomatos and olives.
