"This is a great pasta dish full of fresh flavors! Rather than frozen artichoke hearts, I used two vacuum packed 8 oz. packages of artichoke hearts from the produce section. I also used a full 8 oz. jar of sundried tomatoes. This would also make a great pasta salad, sans sausage, served with a vinaigrette."

"Easy, fresh, healthy, and delicious! I omit the onions, and it is still such as bright, flavorful dish. I would recommend putting the carrots in the oven about 10 minutes before the other vegetables, as they are fibrous and can be a bit too hard if they are not roasted long enough.""

"I love this soup! I like to substitute fresh spinach for the escarole. No need to sautee -- I just put a 10 oz. bag of pre-washed spinach in with the simmering broth until it wilts. I sometimes include cooked ground turkey breast as a healthy, hearty addition. Fresh garlic is too strong for my taste, so I use a teaspoon of garlic juice instead.""
