Reviewed Lemon Ricotta Cookies with Lemon Glaze

"Update: After a day or two, you can toast these in your toaster oven or bread toaster and they come out wonderful! :

These cookies are good (four stars and addicting. I can't say they're my absolute favorite cookie but they are yummy and like I mentioned--addicting. My husband actually really likes them too! The texture of these cookies may not be for everybody-- they're a little chewy/gummy on the edges (but I like that and soft/pillowy in the middle. Some people have reviewed that these are TOO sweet but I disagree. I don't like things too sweet either so I didn't make the glaze. I used half splenda and half regular sugar. They're sweet but the tang of the lemon kind of balances them out. For me, the lemon flavor was not too strong but evident in flavor-- if you're a lemon fan I would add a little more zest or juice. Overall, good cookie. I would make them again.
