I like the simplicity of this recipe, but I could not get past the strong mustard flavor and salt in the dish. I think when I make this again, I will use something else, perhaps a sweet/spicy mustard or even mayo to spread on the pie crust instead of the Dijon, and eliminate the salt on the tomatoes.
