Reviewed Coconut Cream Pie

"This pie was incredible!!!! Best on the planet!!!!
Made the night before and refrigerated overnight! Perfect
Doubled it bc I had crushed a pd of gingersnaps. Everyone raved!!! Thx!
Added some crushed gingersnap mixture to toasted coconut to top fresh whipped cream, yum!

Reviewed Carrot Cake Cupcakes

"Delicious, but I did change up a few things...I used confectioners sugar, melted butter instead of oil, and crasins instead of raisins. And after reading other reviews I checked the muffins with a wooden skewer after 10 mins. on the second baking time and they were done! They were soft and moist and not overly sweet. My frosting was 8oz of cream cheese, 1 stick of butter (nucked together for 30 seconds), 1 1/2 cup confectioners sugar & 1 t. vanilla, fabulous! Everyone loved them! Will definately make notes and bake again! Thx!
