Reviewed Italian Chicken Pasta Salad

I really loved this recipe. I changed it up a bit by eliminating the cucumbers and olives (did not have), but did add marinated artichoke hearts and fresh mozzarella. I also added a pinch of sugar and chopped shallots (did not add the purple onion) to the dressing. Letting it come to room temperature (if refrigerated) really helps the flavors come...

I didn't use blue cheese. I thought it would over power the main dish, which was homemade spaghetti and meatballs. This salad dressing was the best caesar salad dressing that I've had. I will never buy bottled salad dressing again. Thank you.
