Oh My God - this is the best chicken recipe I have ever made. We had just three of us for Easter and thought this would be fun recipe to try - delicious and easy to make. I love this recipe. Have made it twice and can't wait to make it again now that I have found pigeon peas.One of the things I like best about this recipe is you don't puree the squash and I love the texture the cubed squash adds. I also love the level of spice (heat). Here's a few tips, cut back on the coconut a bit if you only have the sweetened....
