Reviewed Indian Summer Stew: Butternut Squash, Coconut, and Lentil Stew

"I love this recipe. Have made it twice and can't wait to make it again now that I have found pigeon peas.One of the things I like best about this recipe is you don't puree the squash and I love the texture the cubed squash adds. I also love the level of spice (heat). Here's a few tips, cut back on the coconut a bit if you only have the sweetened. Also, the recipe doesn't specify the cilantro (I use parsley) is for garnish only. My first batch I added dried cilantro and parsley which measurements are very different and added while cooking. Yikes. I have started to pair this with a salad and some garlic naan bread which makes for a great vegetarian night! Thanks, Aarti!
