I have made this twice in two days. Very good. My 2 boys loved it (one doesn't eat much and the other doesn't like eggs) Go figure. I grated parmesean on top when it came out of the oven. ""

Reviewed Eggnog Flan

As good as it was easy! I only had 3 cups eggnog so I added 1 cup heavy cream which made for a nice mellow eggnog flavor to the flan. I think the 2/3 cup of caramel was too much. 1/3 was plenty since most of it ran up my arm flipping it (boy was that hot). I think the recipe said to wait to flip but I'm not big on waiting in the dessert department....

I'd give Alton a 5 but I made some errors. What do you do with the foam? I over cooked it because I didn't realize it thickened (a lot) when you take it off the heat. I ended up with a gritty, but tasty mess. Any viewer suggestions?
