"Just finished making this soup and like many others, I sauted the veges in the bacon fat. I doubled the amount of potatoes and chicken stock because I have three very hungry teenagers. Reviewed Easy Rice Bake Casserole

"I almost didn't make this because of the reviews, but I'm glad I didn't listen to people who I worry can't cook. I think many people didn't use sharp cheddar cheese and fresh herbs. Four cups of rice is not took much especially for a family of five. I didn't have spinach on hand so I substituted frozen broccoli. I did add a dollop of sour cream, but this turned out great.
