Just finished making this soup and like many others, I sauted the veges in the bacon fat. I doubled the amount of potatoes and chicken stock because I have three very hungry teenagers. I was looking for a sauce that was a littler different and this recipe delivered. The red pepper added just the right amount of flavor and spice. Meatballs came out great, too. I will definately add this to my rotation.

I almost didn't make this because of the reviews, but I'm glad I didn't listen to people who I worry can't cook. I think many people didn't use sharp cheddar cheese and fresh herbs. Made this last night, and it was really great. I had to 1/2 the recipe and left off the bacon at my daughters request and it was still moist.
