Some substitutes I made . . . Asiago and Parm, not Pecorino, removed and drained the sausage and then sauteed the shallots, fatfree ricotta, sherry instead of wine and doubled the amount of peas (I will probaby triple the amount next time!, and no additional salt.
Just delicious!!"

Thanks to Katie for recommending to make half the glaze. Half was plenty for 3 chops.
I didn't have rosemary or scallions - shallots and thyme were great substitutes.
I think it also helped to saute the shallots and garlic in a little olive oil prior to adding the honey, vinegar and spice.
I love Giada!
