First, I'm not a fan of mint or feta so with a couple of substitutions it was a hit. I subbed fresh basil and
freshly grated parmesan. Served with salmon and a salad of arugula with tomatoes marinated in fresh lemon juice, olive oil, salt and pepper. Garnished with a little grated parmesan!! A definite do-over."
