Reviewed Black Bean and Corn Salad
"I was looking for a quick side to go with a potluck BBQ dinner & decided on this one. I doubled the recipe, used a jar of roasted red peppers for the fresh bell pepper, Cholula hot sauce for Mexican flavor and about a teaspoon of honey to mellow out the strong lime flavor of the dressing. I hope it will be a hit at the picnic!"
Reviewed Pecan Pie
"my first attempt @ pecan pie, had a premade mix for the crust but used this recipe for the filling. Got from my Food Network Magazine. My family really enjoyed it.
About Me
I work at the Centralia Public Library as a Reference Librarian. My husband & I have a daughter in college; a mini schnauzer & a beagle. We love to watch Food Network! I especially enjoy the competition shows like Next Food Network Star, Chopped & Next Iron Chef (I wanted Chef Tio to win, but Chef Forgione will be a great Iron Chef I'm sure) I also like to watch Ina, Paula & Anne Burrell.
Favorite Foods
Love any kind of comfort food, side dishes & desserts are my specialty. My husband cooks most of the meats including turkeys, hams, brisket, ribs, etc. & is very attached to his grill/smoker. We love to go out to eat as well, with authentic Mexican as my favorite. I get many requests for my chocolate chip cookies, toffee bars & 7-layer salad
