Had tot come back and say that the overnight process worked like a champ...scraped the beef fat right off the top, got the roast shredded and put the little peppers back, such an incredible flavor! We used Mozzarella cheese under and over the shredded beef in the bun...kept the bun from getting to this and will make it again...thinking...

After figuring out how to cut the recipe down for seasoning, I was able to make the butter. Still had lots of BBQ seasoning left over too! The butter was so perfect on our freshly caught Alaskian Halibut! Worth my hubby being gone for 9 days on his fishing trip to eat this well! Thanks so much Neelys!"

Alex, I can not begin to thank you enough for the most incredible tip on cooking a turkey I have ever heard. I used the cheese-cloth method soaked in butter as you suggested, and we enjoyed the BEST turkey I have EVER made or eaten on Thanksgiving!! I will never cook a turkey without using this method. Happy Holidays from Las Vegas, NV! Laura
