"Swiss Chard, one of my favorite winter veggies, in season now. I loved to make this recipe, although I think most people have trouble to wrangle down 2.5lb of fluffy greens into a pan. I used my wok, which worked just fine on my gas range.
Also, I didn't dischard the color-(and flavor)ful stems, just cut them into smmaller pieces and sautee with the oninons, well ahead of the greens. This will give the dish more texture. It doesn't hurt to cut back a little on the bacon, or skim off some of the fat."
