I make this a lot. However, I don't use phyllo dough, too difficult. Ready made pie crust laid over the casserole dish works great and so much easier. My boys love it! Today I found organic pie crust in the freezer section. I'm going to try it tonight. Love not having sodium benzoate in everything.

Made this last weekend and it was super delicious! I've never had good results with roasting a chicken. The breast meat was always dry and the inside was raw. This is such a great way to cook the chicken. It was so moist and tender and the sauce was absolutely wonderful. Wonder if you could cook a turkey this way! BYW what a cute sweet famil"

Loved this. I baked the potatoes the night before so it all came together so easy. Also, instead of having to cook bacon, I purchased several slices from the deli at our supermarket - I love bacon but hate cooking it I have been eating the leftovers all week for lunch. Yum. We made the variation with Coconut milk and fresh lime juice. I also added chopped red bell pepper and jalapeño to the onion when sautéing before adding the quinoa. LOVED IT! You have to try this. We had it with Alton's recipe for grilled mahi mahi. So good! Oh and we had to add about a half cup of water to get the quinoa to fluff up a litt"
