"i made this for the first time on xmas and as most reviews claim, i too, was very nervous. i did not open oven which i had to tape shut so i would not be tempted. i had a digital thermometer which helped me feel confident it would not over cook. i had an 8 pd roast and it came out perfectly med rare. ""

" i only used the stated juice of one lemon and no zest and it was not too lemony as other reviews. i also used 2T of cream cheese instead of butter. great recipe will do again and again. "
