Reviewed Eggplant Parmesan

It came out tasting great but was a bit watery. I suggest salting the eggplant pieces and then letting them sit in a colander for a while. After that wipe the salt off with a dry paper towel. The salt will help absorb a good amount of moisture out of the eggplant.
