I adapted this recipe to make a sauce in my Vitamix. I sauteed the fennel & scallions until soft in the olive oil, added the wine & reduced a bit. Good & easy! I used "melissa" brand already cooked lentils & my frozen roasted summer tomatoes. My husband would have liked more pasta but I agree w/ previous reviewer...hate mushy pasta in leftover soup. Followed the recipe & just used 2/3 cup of pasta & made more pasta on the side for him."

Very nice on another 100 degree day! I used my immersion blender in a big bowl to puree and it worked great. I used half the amount of sugar, next time will skip altogether. This recipe is a keeper!"

I doubled the recipe, added a whole jalapeno, 1/2 tsp celery salt, 1T worcheshire sauce, 4T balsamic vinegar (along w/ the white wine vinegar) to equal correct amt. Very good on such a hot night! Served w/ chopped avocado, tabasco + cilantro garnish. "

I loved the flavors in this recipe and my husband loved it. My 3 stars refer to the way the recipe is written. Please try to be more specific when stating amounts of ingredients needed. Two slices of ginger? It would be helpful to know what SIZE. Quarter size? 1inch x 1/4 inch? Or even better yet, tell me the volume...i.e. 6 Tablespoons chopped ...
