Reviewed Good Eats Roast Turkey

"I'd give this recipe 6 stars if i could. A few changes:
- I do not have a cooler - a brining bag did the job just fine. The liquid did not cover the bird entirely so had to rotate it once
- No canola oil - used vegetable oil instead
- I sprinkled some salt and pepper after brushing the bird w/ the oil. The outcome was fantastic - the skin was crispy and had extra flavor. People were fighting for them!
- Smoking oven was an issue for me. I just poured some chicken stock in the pan

This is the hands down the best turkey ever. I have purchased turkeys from expensive caterers in Manhattan and this bird beats them all.
