Ok. I made them with thick slices of cucumber instead. Great. I would reduce the salt and more vinegar, add garlic cloves, along with the peppercorns. More importantly, I put them in the fridge immediately, and they were ready to go in 24 hours...no need to leave out. They were great. Cant wait to try the same idea with hot peppers from the "
