"My local grocery store threw me a curve ball the night before Thanksgiving by losing my fresh turkey reservation and sent me home w/ 2 turkey 5 # breasts. I had already made the brine for a 16 # bird and had it waiting. I worried that the 6# meat defecit might prove fatal (too salty), but it turned out wonderfully. They brined overnight on my sister's deck in the Wisconsin cold. They cooked in less time of course than a full bird but were juicy and delicious. I join all in saying I will never roast another Turkey unbrined.
I have a question tho'...can I roast this brined bird in a Nesco if I am short an oven?
