I just made this last night and used queso fresco instead of mozzarella as she mentioned in the episode, otherwise I followed it exactly. It turned out so yummy - my family loved it! The poblano sauce isn't too spicy, but adds a really nice warmth to the dish. The queso fresco had a little more tartness and firmness after baking than mozzarella...
