Reviewed Coconut Cupcakes

"Excellent. I thought the cupcakes might need to be put in the refrigerator due to the cream cheese in the frosting. However, this made them quite heavy. So I left them out and they were great. The recipe made more frosting than I prefer to use. Could have cut the frosting amount in half for my preferences and just put a thin layer on them.

"Easy - will use the technique for preparing the pork again. However, would have like a bit more seasoning in the flour that the pork was dredged in.
