Wow! Yummy! I used a german beer and 3 fresh andouille sausages. My thighs were large so when I added the chicken back to the pot I covered and simmered for about 35-40 min.. Meat fell off the bone! WONDERFUL!!! I used a 3 lb tenderloin instead of 2 smaller ones..(Adjust cooking time accordingly)... I also substituted pepper jack for plain monterey jack, added a little more spice. YUMMY!! Left overs were really great for sandwiches as someone else suggesed!! Definitely a do over in our house!!!!!
