We served over egg noodles. I think it would be good with mashed potatoes as well. Personally, I think the cognac was a bit strong but everyone else disagreed with me. Keeping the recipe exactly as it is but adding a little pepper next time because we are pepper freaks :-)

This is a great recipe! I leave out the jalapeno (we do not like spicy!) and use fresh pineapple. For the pineapple juice, I squeeze it directly from the fresh pineapple. I can not wait to try this as a marinade for chicken."
