This was simple and delicious, a perfect weeknight dinner. I also added sun dried tomatoes when cooking down the onions, garlic, and pepper, then I threw sweet chicken meatballs on top of each bowl. I will make this again and again.

I can't believe how delicious this was!!! I needed a recipe to use up some eggplants from my summer garden and I am so glad I found this one. The process was a little long, but totally worth it.
