It doesn't need okra to qualify as a "gumbo"! To qualify as a gumbo it needs a stock, meat, the "trinity" (onions, bell peppers, and celery) and something that thickens it which is one or all of these: file, roux, OR okra. This recipe contains a stock, meat, the trinity, and a roux. So this recipe is officially a "gumbo"!
