"This recipe was awesome. I did some substitutions, didn't have arugula so used romaine. Added some thinly sliced fennel to the salad. I really enjoyed serving the salad on top of the chicken, was very refreshing and healthy tasting. Also grilled it on the George Foreman 360 grill for about 4 minutes. Quick,easy, healthy...and tasted great. Will be on my list of quick weeknight meals! A definite go to recipe.
