I have made numerous carmel recipes, so am experienced with boiling sugar. After 1 HOUR, all I had was beige foam. So I gave up, mixed in the peanuts, and got great sugared peanuts, but not brittle. Alton, you let us down on this one. After looking at other recipes, he has way too much water in this. Thank goodness I have more peanuts to try again...

Could not find Derby Cheddar anywhere, so I substituted Havarti, and added a lot of chopped fresh sage (at least 10 leaves). Still did not have a lot of sage flavor, but the ham was a good addition. Spinach added color, but not much flavor--good way to sneak vegatables into the hubby!"

Pretty good--likely depends mostly on your chorizo. Here in MI, we're lucky if we can get Mexican chorizo, let alone Spanish, so I made it with the former. Made plenty for two meals for two people. Will likely make it again."
