I brined mine for 7 days and it was the most moist corned beef I have ever had. I'm Irish and have cooked many a corned beef. I am only sorry that I did a half corned beef. This was the best Turkey I have ever made! I brined it for 4 days as I had to work the 3 days before Thanksgiving. Very moist and the leftovers are just as moist. I did stuff it as well and sometimes that draws the moisture from the bird, but not with this recipe.Gravy was to die for as well. I will use this recipe every time I bake a Turkey. Well"
