Reviewed Cream of Wild Mushroom Soup
"Oh my goodness this is mushroom heaven! I bought 1.5 lbs of wild mushrooms from the Farmer's Market - cremini, shiitake, oyster. My variations to this recipe: 1) set aside 2 cups of mushrooms to add at the end; 2) used my hand blender to blend the veggies and stock together then added the cream, parsley, and reserved mushrooms (I prefer that texture); 3) sherry instead of white wine. THIS IS FANTASTIC!!"
