Reviewed Spinach and Pancetta Strata
"Huge hit at brunch. I added chopped asparagus, 4 strips of bacon, some finely shredded swiss cheese, and had a combo of sourdough and ciabatta(mostly sourdough). Definitely let the strata soak overnight if you can, as is makes the consistency of the bread perfect. No problems with the tough crust on the sourdough.
