Reviewed Roasted Beef Tenderloin with Rosemary, Chocolate and Wine Sauce

"This was an easy, excellent recipe. My guests thought it was one of the best meals they'd EVER had. I'll never do a standing rib roast again. This is better and healthier.

Reviewed Chocolate Raspberry Pavlova

"Spectacular dessert that's light and refreshingly sweet. Very showy, and my Christmas guests raved!
Why 4 stars? The recipe should be more specific. Because I was skeptical that the chocolate would have enough flavor, I used Ghirardelli cocoa, not Hersheys, and good quality dark chocolate chunks. This made a big difference. I also put about 1/2 t of vanilla, and a little sugar in my whipped cream because that's the way my kids like it. I also dusted with sifted powdered sugar (snow for effect, a welcome touch. Also, use a springform or form a "cake" on a baking sheet. I hadn't seen this done, and used a nonstick cake pan. It was fine, but was rather delicate to remove. Would be good with pecans folded in.
Will absolutely make again. The word about this dessert has spread like wildfire in our circle of friends!
