"This was delicious and although I like pretty spicy, my son and I thought this was very spicy and were drinking water all through dinner. I like the tortilla idea and it was easy, although I used an empty beer can because that is all I had and the opening was pretty small. Next time I will use an empty 28 oz tomato can. Reviewed Dad's Meatloaf with Tomato Relish
"My husband said this was awesome. I cooked it in a meatloaf pan with removable bottom, so the grease could drain out. I only aded one cup of the relish as it was REALLY wet and I was apprehensive. Totally delicious. Will be making this weekly. Even fussy teenaged son wolfed it down."

"I made this last night after reading all the great reviews. I used 1/2 and 1/2 and it didn't really get as thick as I would have liked. My husband and son practically licked the plate, thus the 4 stars, however I would have liked to kick it up with flavour a notch by adding goat cheese. You don't need 1 cup of the cajun spice though, way too much. Next time I would also add the chicken at the very end just to coat it with sauce.
