My Activity

Reviewed Aunt Peggy's Sweet Potato Souffle

"This recipe is a lot like my Mother's Festive Sweet Potato Recipe.

Along with the 3 cups of mashed cooked sweet potatoes, her recipe calls for 1/2 cup sugar, 1/4 cup milk (I use skim),1/3 cup butter, 2 eggs, 1 tsp vanilla . For the topping, I use 1 cup coconut, 1 cup brown sugar, 1/3 cup flour, 1/3 stick butter and 1 cup chopped pecans. I must say my recipe is much better.

However her recipe calls 3 cups mashed cooked sweet potatoes 1/2 cup sugar, 1/4 cup milk (I use skim), 2 eggs, 1 tsp vanilla, and only 1/3 cup of butter. As for the topping I use 1 cup coconut, 1 cup brown sugar, 1/3 cup flour, 1/3 stick butter and 1 cup chopped pecans. I must say my recipe is much better.
