I used bacon instead of pancetta and just cooked it in the pan with the onion and garlic. I then proceeded reciped as directed sans bay leaf....I too used canned artichoke hearts nicely drained and that was fine! Try finishing it with some freshly shaved parm and a hunk of crisp bread! I liked the recipe. When I roasted the califlower with olive oil, salt and pepper I also added some shredded parmesan! Yum! I also added a little honey to the dressing. I preferred to add the dressing as I served it with just a little on the top like a sour cream. Thanks Giada!
