"Maybe medium heat for gas stoves. My electric's medium burned one side of these chops in 5 minutes. Other side was browned in 2 minutes. Had to finish in oven. Tasty prep for pork chops, but medium heat is not equal among stovetops. For electric elements, use a low heat and watch closely. ""

"Too dry. I followed the recipe exactly. And, 3 hrs total was too much for my 14 lb turkey. Way overcooked and way too dry, especially for a fresh,heirloom, expensive turkey. Last year, i used Emeril's brined recipe with the same fresh, heirloom turkey source, and it was mouthwatering & perfect. The high heat may provide a crispy skin, but it's not""
