I was skeptical since I am used to the traditional gumbos. But this was delicious. I made it exactly as described. I could see adding some andouille, shrimp, or chicken to it, but that may be too many calories. "

I left out the capers and everyone loved it anyway. The next time, I will leave out the red pepper flakes for my toddler. I used organic angel hair pasta for fewer calories, and organic tomatoes for better taste. "

My only problem was trying to find artichoke hearts that weren't pickled or marinated. That really killed it for me. I served it over brown rice. I will make it again if I can find plain artichoke hearts. "
