"I thought this was good, but not great. The fennel sauce was the best part, but the meat didn't have enough seasoning for me. If I make it again I will probably add garlic to the pork seasoning. Definitely have some good bread with this to use to soak up the sauce -- its the best part.
"This is absolutely delish! I would have never thought to put eggplant in my quesadilla and it worked out perfectly. I look forward to making this again and perhaps adding shrimp to the mix!
