This soup was delicious!
Though I'm sure it's just as good by following the recipe, I made the following modifications:

Beef Stock instead of Chick Stock, reduced to 2 1/2 quarts instead of 3 (it's what I had on hand)
Beluga/black lentils instead of green (they are a bit more firm)
Gruyere instead of Parmesan...
