I'm not sure why this is listed as intermediate when it is really easy. I didn't have cabbage, coleslaw or radishes so had to improvise with chopped romaine and avocado. My favorite minestrone. This is a more "tomatoey" minestrone, but I like tomatoes so I loved it. My husband likes a version with more broth and less tomato but since I am cooking, this is what we had. It tasted like a meal version of a bloody mary, without the vodka of course. This was wonderfully easy and yummy. I had some leftover steak from the previous night's dinner and this was the perfect way to use it. I did follow some reviewers' suggestions: added hard boiled eggs (2), used feta because that was what I could find, and slowly added olive oil to dressing until I didn't obviously taste the vinegar but not too "

I only had a pound of green beans, but even considering that; the cooking time listed in the recipe is entirely too long. The beans started turning army green which is not how we like our green beans. I cooked the beans and the rest about a half hour which was just slightly too long.
