Pretty good, I made some changes after reading reviews... which seemed to solve the issues...

(if halving the recipe)
- Melt 1 tablespoon butter in a pan over medium heat. Salt and pepper the chicken and cook for 5 minutes on each side. Remove and cover tightly with foil.
- Place the same pan back on medium heat....

A rare Emeril fail.... we made all parts of this recipe and found that combined it was far too earthy. Bland and earthy, if I hadn't made it I never would have known all of the extra ingredients put into the quinoa, mushrooms, and leeks because we couldn't really taste them.

I like Brie, Spinach, Chicken and Balsamic.....but all of these combined did not do it for me..

The only change I made was to use fresh chopped thyme and garlic because I did not have the seasoning on hand. I don't think that would change my opinion though if I had used it. "
