AAAAAAMAZING !!!! Whole Family loved them. I made them a bit easier - just used cauliflower, Neufchatel Cheese (instead of cream cheese, and added Parmesan cheese and garlic.
Mixed it all up in the blender, and whamo, a delicious, healthy side dish!"

This is a fabulous salad !!!!! Its yummy Italian like - with the beans and dressing - LOVED IT !!
You have to do a separate search for the dressing recipe, since its not following the salad.....anyways, its amazing, both the salad and dressing!
Only change I made, was to add some sliced mushrooms and some thin red onion slices,...

Loved it !!! Wasn't sure it would be t-h-a-t good, but it was !!!!!!
Only change I made, was to not add as much oil - I used 2/3 cup oil and 1/3 cup water.
It was probably more watery, but I don't like heavy dressing.

Delicious!!!! I used a tad less than 1/3 cup of lemon juice and it was perfect. I don't have an oven proof skillet, so I followed the stove-top direction, then scooped the potatoes to my stoneware baking sheet and added most of the left-over liquid from the skillet. They were SO good !!!!"

Whole Family loved it!! I read the reviews prior, so I used 1/8 cup of sugar as suggested by many, and it was perfect. I believe 1/4 cup would have been way too sweet. I didn't use any meat because it was a side dish to my chicken - it was delicious !!! A keeper for sure. ""

I added a few more cloves of garlic, and extra lemon zest - it was AMAZING!! I use this dish as a "staple" and will add left over chicken or steak in it, add asparagus, or chopped zucchini.
If it gets a bit thick because of the added ingredients, I will add some chicken broth.
Definitely a keeper !!""

I followed the recipe exactly. It was easy & delicious !! The entire family LOVED it !
You just have to make sure you cook the beets early enough in the day, and leave in frige until you are ready to put the salad together
