Dynamite! I've made this recipe for three of the past five Thanksgivings. The first year it came out a tad dry, but I think it was my bad and I'd overcooked. This and last year year, I used a probe thermometer to keep tabs on the internal temperature and got a winner. Great flavor and nice, moist meat.

Thought this was great. Easy and tasty. I made a few modifications to the recipe, though. First, I brushed all the baguette slices with EVOO before toasting to add an additional touch of rich sweetness. I also made half of mine with stilton (rather than the sharper Roquefort) and half with chevre. Both were great compliments with the pear and...
