"These are the BEST muffins ever - they should be called EVERYTHING BUT THE KITCHEN SINK MUFFINS!!! My family eats Gluten Free so we substituted a Pamela's gluten free baking mix for the flour and baking soda. These are perfect for Gluten Free baking as the other ingredients really make it moist. I have done these with and without the parsnips - PLEASE make it with the PARSNIPS they really add a great flavor. I did cut back the sugar a little also."

About Me

As a Celiac on a Gluten Free Diet I have found my cooking hobby invaluable.  I love to try new things and modify the recipes to fit my needs without affecting the great taste.  My son and father are also on the diet so they appreciate my cooking as well as it is hard to find Gluten Free restaurants in my area.

Favorite Foods

ALL foods are my favorite!!!  However I feel that Rachel Ray's style of cooking is in line with what I love to do at home.  One pot cooking - chop and saute different combinations to make great flavors.  I will tackle more complicated dishes but only when I have the time to dedicate to doing it right!!  Favorite foods to eat out: Sushi, BBQ, mexican, and seafood (cioppino).  Legal Seafood's Gluten Free menu is the BEST - nothing like freshly baked cheesy gluten free biscuits made to order.  Favorite NYC restaurant is Blue Water Grill - raw bar is amazing, its in a great location with lots going on and old bank building is beautiful.  Best Comfort Food Cookbook - Family Get Togethers.
