These are absolutely divine. They are a bit time consuming, but are so much fun and easy to make. I baked them the night before, stuck them in the fridge, and just put them in a 250 degree oven for about 15 minutes to warm them up (which is a tip Ree gives in her cookbook!) My boyfriend's mom always makes the most amazing twice baked potatoes, and I have never been able to even come close to replicating them til now! I halved the recipe, because I didn't need 12-16 servings, and used unsalted butter to cut back on the salt a bit. They turned out amazing! I will definitely be making these again and again!""
